Mediterranean salad
Ingredients
- 1 tablespoon of salt
- 2 packages of Zucchini Noodles Eva® (300 g each)
- 1 cup yogurt (for the dressing)
- 1 tablespoon garlic powder (for the dressing)
- 1 tablespoon of onion powder (for the dressing)
- ½ tablespoon of parsley (finely chopped, for dressing
- 1 tablespoon of fennel (chopped, for the dressing)
- 3 tablespoons of lemon juice (for dressing)
- ¼ cup of Parmesan cheese (for dressing)
- ¼ Cup Milk
- pepper for dressing
- salt for dressing
- 1 cup of cherry tomatoes (colored, cut in half)
- 1 cup of fresh basil
- 1 cup of cucumber cut in half with peel
- ¼ cup of red onion (filleted)
- ½ cup of artichoke hearts (cut in half)
- ¼ cup of feta cheese (crumbled)
- 2 tablespoons of olive oil
- 1 pinch of salt
- 1 pinch of pepper
Preparation
- Heat a pot over medium heat with the water and salt until it boils. Cook the Zucchini Noodles Eva® for 3 minutes. Place in water with ice to stop cooking, strain and reserve.
- For the dressing, blend the yogurt with the garlic powder, onion powder, parsley, fennel, lemon juice, Parmesan cheese, milk and season with salt and pepper.
- In a bowl mix the Zucchini Noodles Eva® with the tomatoes, basil, cucumber, onion, artichoke, cheese, a little olive oil, salt, and pepper. Serve with the dressing.
