Noodles with creamy chipotle and Pasilla sauce


  • 1 cup of heavy cream
  • ½ cup of cream cheese
  • 2 Pieces of Chipotle Chile marinated
  • 1 Piece of Pasilla chiles (deveined, roasted and soaked)
  • 1 tablespoon of coriander
  • 1 piece of garlic
  • 1 tablespoon butter
  • Salt andPepper
  • 2 tablespoons of butter
  • 2 packages of Zucchini Noodles Eva® (300 g each)
  • Fried pasilla chili rings, to decorate
  • Coriander (for garnish)
  • Parmesan cheese (for garnish)


  1. Blend the cream, cheese, chipotle pepper, Pasilla chiles, cilantro and garlic.
  2. Heat a tablespoon of butter, pour in the sauce, season with salt and pepper and cook for 10 minutes or until slightly thickened.
  3. In a frying pan, heat the butter and cook the Eva® Zucchini Noodles for about 5 minutes or until they are “al dente”.
  4. Pour in the sauce, add and cook for 3 more minutes over low heat.
  5. Serve on an extended plate and garnish with pasilla chile rings, fresh coriander and Parmesan.
