Vegan Paella

Vegan Paella

Ingredients:

  • 3 tablespoons of olive oil
  • 1 cup of tofu
  • 1 piece of onion
  • 3 garlic cloves
  • 1 piece of red pepper
  • 1 piece of pumpkin
  • 3/4 cups of Cauliflower Bits Eva®
  • 3/4 cups of Broccoli Bits Eva®
  • 1/2 cup of white wine
  • 1 tablespoon of saffron
  • 1 cup of green peas
  • 1/3 of cup of black olives
  • 8 pieces of dehydrated tomatoes
  • 1 cup of artichoke hearts
  • 1 tablespoon of parsley
    • 2 pieces of yellow lemon

Preparation:

1.In a paella pan, heat the oil over medium heat, add the tofu cubes, the onion, the red pepper and cook for 5 minutes, then add the pumpkin and cook for 2 more minutes.

2.Add the Cauliflower Eva® Bits and the Broccoli Eva® Bits, cook for a few minutes and add the wine, cook for 15 more minutes over low heat.

3.Add the peas, black olives, dehydrated tomatoes and the artichoke hearts, cook for 5 more minutes over low heat.

4.Garnish with parsley and lemon.

5.Serve.
