
Chicken stuffed with kale and goat cheese
Ingredients:
- 1 bag of Eva Mighty Ginger Salad ®
- 4 pieces of chicken Milanese salt and pepper (to taste)
- 4 tablespoons of oil
- 1/4 of piece of onion
- 1 clove garlic
- 1 cup of whipping cream
- 1 tablespoon Dijon mustard
- 1 tablespoon butter
Preparation:
1.In a bowl, mix the goat cheese, flaxseed and blueberries from the Eva® Mighty Ginger Salad bag. Reserve the Eva® honey-ginger dressing.
2.Place a little of the cheese mixture on top of the milanese. Add kale and lettuce from the salad bag.
3.Roll the milaneses and secure with the help of a wooden toothpick. Season with salt and pepper.
4.In a skillet over medium heat, heat the oil and fry the chicken fillets until golden brown and cooked. Reserve.
5.For the sauce, blend the onion with the garlic, the whipping cream, the mustard and the Eva® honey-ginger dressing that you reserved.
6.In a saucepan over medium heat, melt the butter and add the sauce. Cook for about 5 minutes and correct seasoning.
7.Cut the milaneses into slices and serve with the sauce.
