Portobellos Stuffed with French Lettuce

Ingredients

  • 4 pieces of portobellos
  • 2 pinches of salt to glaze
  • 2 pinches of pepper to glaze
  • 1 tablespoon of olive oil
  • 1 tablespoon of butter
  • 1/8 piece of red onion
  • 1 clove of garlic finely minced
  • 2 packages of Eva® Mini French Lettuce (150g) chopped
  • 1/4 cup of roasted peanuts
  • 1/2 cup Eva® Parmesan dressing
  • 1 pinch of salt
  • 1 cup of gouda cheese grated
  • 1 tablespoon chopped Eva® French Lettuce

Preparation

1.Preheat the oven to 180 ° C.

2.Glaze the portobellos with olive oil, salt and pepper.

3.In a skillet in medium temperature, heat the oil and butter.

4.Cook the red onion until it is transparent and add the garlic. Cook for one minute.

5.Add the Eva® Mini French lettuce and cook for 5 minutes.

6.Mix with the peanuts, Eva® Parmesan dressing and season with salt if necessary.

7.Fill the portobellos and cover with the cheese. Bake for 20 minutes or until the portobellos are soft and the cheese is melted.

Garnish with chopped lettuce leaves and serve immediately.
