
Lettuce salad with peaches
Ingredients:

- 2 tablespoons margarine
- 1 1/2 tablespoon raw sugar
- 2 pieces of Rosetta Eva® lettuce
- 2 cups diced feta cheese
- 1/2 cup of chopped and toasted walnuts
- 1/2 cup of toasted sliced almonds
- 1/2 cup dried cranberries
- 1/2 cup of toasted seeds (pepitas)
- 1 piece of avocado in cubes
- 2 garlic cloves, peeled
- 4 sprigs of rosemary, chopped
- 1/2 teaspoon of grain salt
- juice of 2 pieces of lemon
- 1/8 of cup of white vinegar
- 1/2 of cup of olive oil
Preparation
1.Cut the peaches into quarters.
2.In a grill pan over medium heat, melt the margarine and add the sugar and peaches until they are caramelized and marked, then remove and reserve.
3.In a bowl, mix the chopped Rosetta Eva® Lettuce, with the cheese, walnuts, almonds, blueberries, seeds and avocado.
4.For the vinaigrette, with the help of a mortar, crush the garlic with the rosemary and salt until it forms a paste.
5.Transfer to a bowl and mix with the lemon juice and vinegar. Emulsify little by little with the olive oil.
6.Serve the salad with the peaches and the vinaigrette.
