Cold Vegetable Lasagna
Ingredients
- 6 pieces of pumpkin cut into sheets
- 5 pieces of tomatoes cut into slices
- 1 bag of Eva Mixed Salad (454 g)
- 3 pieces Avocado cut into slices
- 1 cup Eva® White Wine dressing
- ½ cup grated Parmesan cheese, for garnish
- 4 sprigs of rugula to decorate
- 1/2 cup of dehydrated tomatoes
- 4 pieces of tomato
- 2 sprigs of basil
- 1/4 of cup of olive oil
- 1 teaspoon salt
- 1/2 teaspoon of pepper
Preparation
1.For the tomato sauce, process all the ingredients until you get a paste. Reserve.
2.In different bowls, place the pumpkins, tomatoes, salad and avocado. Mix with the Eva® White Wine dressing.
3.In a baking dish, place a layer of pumpkins, followed by tomato sauce, tomatoes, a bed of salad and avocado. Repeat until the vegetables are finished.
4.Sprinkle with Parmesan cheese and garnish with a few sprigs of arugula.
