Cold Vegetable Lasagna

Ingredients

  • 6 pieces of pumpkin cut into sheets
  • 5 pieces of tomatoes cut into slices
  • 1 bag of Eva Mixed Salad (454 g)
  • 3 pieces Avocado cut into slices
  • 1 cup Eva® White Wine dressing
  • ½ cup grated Parmesan cheese, for garnish
  • 4 sprigs of rugula to decorate
  • 1/2 cup of dehydrated tomatoes
  • 4 pieces of tomato
  • 2 sprigs of basil
  • 1/4 of cup of olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon of pepper

Preparation

1.For the tomato sauce, process all the ingredients until you get a paste. Reserve.

2.In different bowls, place the pumpkins, tomatoes, salad and avocado. Mix with the Eva® White Wine dressing.

3.In a baking dish, place a layer of pumpkins, followed by tomato sauce, tomatoes, a bed of salad and avocado. Repeat until the vegetables are finished.

4.Sprinkle with Parmesan cheese and garnish with a few sprigs of arugula.
